This is a really hearty meal. The beans, which make up the bulk of the recipe, are very inexpensive to buy in the shops, making this a very cheap and delicious meal to put together.
So, get a little olive oil in a pan, add 4 chopped spring onions to this and soften. Push them to one side of the pan and now add one small log of chorizo sausage into chunks, with a pinch of sugar. Fry this until is is crispy around the edges. Now add 2 cloves of garlic, crushed and chopped. 1 glass of white wine and deglaze the pan.
Now add 1 can of butter beans (or you could use another variety of beans like kidney or cannellini), 3 or4 sprigs of thyme, 1 fresh red chilli (chopped up), 3 tablespoons of creme fraiche, and, finally, a good grind of black pepper. It may need salt: just check and decide.
This is nice served with a crusty baguette and mixed leaf salad and, as you serve it, top each dish with a nice sprinkle of Parmesan cheese.
